You can sense style and pride in their work, at every expression of Jacquesson champagne, and it is worth to surf through their site
Here is how they describe this champagne I had the fortune and pleasure to try. It is a bright medium lemon color wine with small bubbles of long persistence in the glass. Clean on the nose with pronounced intensity of developing aromas displaying yeast, biscuit, toast, baking bread, apple, peach, black pepper, grapefruit and vanilla. Dry on the mouth with high acidity, delicate mousse and medium- alcohol, full body and pronounced flavor intensity suggesting yeast, biscuit, toast, baking bread, apple, peach, black pepper, grapefruit and vanilla. Long finish with a great autolytic and floral aftertaste. Outstanding quality for a wine that is balanced between its lively acidity and a well-defined fruit character, complex in its nature and with long finish. Epitome of finesse and style, this wine can age for many years (would love to try it in 10 years) and it really illustrates the best of Champagne.
I paired it with an omelet with strong cheese from Naxos, mushrooms, hot peppers, Italian salami, green onions and tomatoes (which was a heavenly match), and would love to try it with pasta with white sauce and meat and fish with sauce. BRAVO!
